  • 1 lb chicken breast, cubed
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped

Instructions

  1. In a large pan over medium-high heat, heat olive or sesame oil. Add cubed chicken and sauté until browned and cooked through. Remove from the pan.
  2. In the same pan, add minced garlic and sauté briefly until fragrant. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Simmer to combine flavors.
  3. Mix cornstarch with water and add to the sauce; cook until thickened.
  4. Return chicken to the pan along with pineapple chunks and diced red bell pepper. Stir to coat evenly.
  5. Add pre-cooked rice and mix well; heat through until warm.
  6. Garnish with chopped green onions before serving.
