  • 1 pound raw jumbo shrimp (deveined and cleaned)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1 cup pineapple chunks
  • 3 cloves garlic (minced)
  • 3/4 cup pineapple juice
  • 1/4 cup low sodium soy sauce
  • 1/3 cup low sodium chicken broth
  • 2 teaspoons cornstarch
  • 2 teaspoons vegetable oil (or canola oil)
  • 1 teaspoon minced ginger
  • Salt and pepper (to taste)
  • 1 tablespoon water
  • 1/4 cup brown sugar (packed – honey or maple syrup)
  • 1 teaspoon sesame seeds (for garnishing)
  • 1 tablespoon sliced green onions (for garnishing)

Instructions

  1. Whisk together sauce ingredients: pineapple juice, soy sauce, chicken broth, garlic, and ginger.
  2. Heat vegetable oil in a large pan over medium-high heat. Cook shrimp seasoned with salt and pepper until pink (6-8 minutes). Remove from pan.
  3. In the same pan, sauté bell pepper and pineapple for about 4-5 minutes until tender.
  4. Add garlic and ginger; cook for an additional 30 seconds.
  5. Stir in the prepared sauce and bring to a gentle simmer.
  6. Mix cornstarch with water until smooth; add to the pan while stirring constantly until thickened.
  7. Return shrimp to the pan and stir to coat well.
  8. Serve alongside rice, garnished with sesame seeds and green onions.
