  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 cups warm water (about 110°F)
  • 1 tablespoon brown sugar
  • 2 teaspoons salt
  • 1/4 cup baking soda (for boiling bath)
  • Coarse sea salt (for topping)

Instructions

  1. In a large bowl, mix warm water and brown sugar. Sprinkle yeast on top and let sit for 5–10 minutes until foamy.
  2. Add bread flour and salt to the yeast mixture, stirring until it forms a shaggy dough. Knead for 8–10 minutes until smooth.
  3. Cover the bowl with a towel and let the dough rise in a warm place for about an hour or until doubled in size.
  4. Punch down the dough and divide it into 4–6 equal pieces, shaping each into a ball on a parchment-lined baking sheet.
  5. Boil water in a large pot, carefully adding baking soda. Boil each dough ball for about 30 seconds on each side before returning to the baking sheet.
  6. Brush with beaten egg wash, sprinkle coarse sea salt on top, and score an 'X' design using a sharp knife.
  7. Preheat oven to 425°F (220°C) and bake for 20–25 minutes until golden brown. Let cool slightly before cutting off tops and hollowing out the centers.
