  • 1 cup quinoa
  • 1 (10-ounce) can red enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 1/2 cup corn kernels
  • 1/2 cup canned black beans
  • 2 tablespoons chopped fresh cilantro leaves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Kosher salt and freshly ground black pepper (to taste)
  • 3/4 cup shredded cheddar cheese (divided)
  • 3/4 cup shredded mozzarella cheese (divided)
  • 1 avocado (halved, seeded, peeled and diced)
  • 1 Roma tomato (diced)

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. Preheat oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
  3. In a bowl, mix cooked quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin, chili powder, salt, pepper, and half of each cheese.
  4. Spread mixture in the baking dish and top with remaining cheese.
  5. Bake for about 15 minutes until bubbly and golden brown.
  6. Serve hot with avocado and tomato garnish.
