  • 1/2 lemon (zested)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 cup roughly chopped frozen raspberries (do not thaw)
  • For the glaze: 1 cup powdered sugar, 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, and baking powder.
  3. In another bowl, cream cubed butter until light and fluffy. Add heavy cream, lemon zest, and lemon juice; mix well.
  4. Gradually combine dry ingredients with wet ingredients until just mixed. Fold in frozen raspberries gently.
  5. Drop dollops of dough onto the prepared baking sheet with space between each cookie.
  6. Bake for about 12 minutes or until edges are lightly golden.
