  • 10 oz chicken sausage
  • 2.5 tbsp butter
  • 1 large onion, diced
  • 4 carrots, sliced
  • 2 celery stalks, chopped
  • 1.25 cup leek, using white and light green parts only
  • 4 garlic cloves, minced
  • 4 cups chicken broth
  • 2.25 lb potatoes, peeled and cut into 1/2-inch cubes
  • 2 bay leaves
  • 2 tsp marjoram
  • 0.75 tsp salt
  • 0.5 tsp pepper
  • 0.5 tsp nutmeg
  • 1/2 cup half & half
  • 1/4 cup parsley, chopped for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion, carrots, celery, leeks, and garlic; sauté until tender.
  2. Pour in chicken broth and add cubed potatoes. Bring to a gentle boil then reduce heat to low.
  3. Stir in bay leaves, marjoram, salt, pepper, and nutmeg. Simmer for about 15 minutes until potatoes are tender.
  4. Remove bay leaves and stir in half & half until creamy.
  5. Serve warm garnished with parsley.
