  • 8 to 10 ears of fresh sweet corn
  • 4 tablespoons butter (divided; use 6 tablespoons if omitting bacon grease)
  • Salt & pepper to taste

Instructions

  1. Prepare the Corn: Shuck and clean the corn, then stand each ear in a large bowl or pan to cut off the kernels. Use a sharp knife to slice down each cob.
  2. Scrape for Flavor: Hold the back of the knife almost perpendicular to the cob and scrape down gently to extract starch from the kernels.
  3. Cook: Heat a skillet over medium heat. Add butter (and bacon grease if using) until melted, then add the prepared corn. Season with salt and pepper.
  4. Stir and Enjoy: Reduce heat to medium-low, stirring frequently for about 20-30 minutes until desired tenderness is reached. Add remaining butter just before serving.
