  • 1 1/2 cups grated carrot
  • 1 cup grated zucchini
  • 1/2 cup chopped walnuts (or sunflower seeds for nut-free)
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla until smooth.
  3. Fold in grated carrot, zucchini, and chopped walnuts.
  4. In another bowl, mix flour, baking powder, ground ginger, and baking soda; then gradually add to wet ingredients.
  5. Pour batter into a greased pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. While cooling, beat cream cheese, icing sugar, and lemon zest until creamy.
  7. Frost cooled bars and cut into squares.
