  • 3 oz baby spinach
  • 10 oz cherry tomatoes
  • 1 jar of sun-dried tomatoes in oil (8.5 oz)
  • ½ small red onion
  • ½ cup shredded parmesan cheese
  • 8 oz mozzarella pearls
  • â…“ cup fresh basil
  • â…“ cup extra virgin olive oil
  • â…“ cup oil drained from sun-dried tomatoes
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves
  • 1 tsp Italian seasoning
  • ½ tsp pepper
  • ½ tsp salt

Instructions

  1. Cook the short pasta al dente according to package directions. Drain and toss with baby spinach until wilted. Rinse with cool water.
  2. In a large bowl, combine the cooled pasta mixture with chopped basil, diced red onion, sun-dried tomatoes, halved cherry tomatoes, shredded Parmesan, and mozzarella pearls.
  3. For the dressing, whisk together olive oil, reserved sun-dried tomato oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper.
  4. Toss three-quarters of the dressing into the salad and refrigerate for at least 30 minutes before serving. Add remaining dressing before serving for an extra burst of flavor.
