  • 2 medium butternut squash
  • 2 cups cooked chicken, shredded
  • 4 tbsp olive oil
  • 2 tbsp honey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the butternut squash lengthwise and brush with olive oil. Drizzle honey and sprinkle with cinnamon, salt, and pepper.
  3. Place squash cut-side down on a baking sheet and roast for 30–40 minutes until fork-tender.
  4. In a bowl, mix shredded chicken with warm chicken broth, diced onion, minced garlic, salt, pepper, and half of the Parmesan cheese.
  5. Once roasted, scoop out some flesh from the squash and add it to the filling mixture.
  6. Stuff each squash half generously with the filling and top with remaining Parmesan cheese.
  7. Bake for an additional 15 minutes until heated through and golden.
