  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup sweet chili sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions, sliced
  • Lime wedges for serving

Instructions

  1. Pat the shrimp dry and season lightly with salt and black pepper. Prepare the asparagus by cutting it into 2-inch pieces, then mince garlic and grate ginger.
  2. In a bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, and a cornstarch slurry made from cornstarch mixed with water. Set aside.
  3. Heat olive oil in a pan over medium-high heat. Stir-fry asparagus for about 2-3 minutes until slightly tender yet crisp. Remove from the pan.
  4. In the same pan, add seasoned shrimp along with garlic, ginger, and red pepper flakes if desired. Cook for about 2 minutes per side until shrimp are pink and opaque.
  5. Pour in the sweet chili sauce mixture and stir to combine. Let it thicken for about 1-2 minutes.
  6. Return asparagus to the pan and gently toss everything together until well-coated in sauce.
  7. Garnish with sesame seeds and sliced green onions before serving.
