  • 1 1/4 cups heavy cream
  • 3/4 cup whole milk
  • 1/4 cup Thai tea mix
  • 5 egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 23 tbsp granulated sugar (for caramelizing)

Instructions

  1. In a saucepan, combine heavy cream and milk over low heat until simmering. Turn off heat and add Thai tea mix; steep for 15 minutes.
  2. Preheat oven to 300°F (150°C).
  3. In a bowl, whisk together egg yolks, sugar, and vanilla until blended.
  4. Strain infused cream into a saucepan and gently heat until simmering again.
  5. Gradually whisk hot cream into egg mixture to avoid curdling.
  6. Strain combined mixture into ramekins placed in a baking pan.
  7. Add boiling water to the pan around ramekins and bake for 35-40 minutes until set but slightly wobbly.
  8. Cool at room temperature before refrigerating for at least 2 hours.
  9. Sprinkle sugar on cooled custards and caramelize using a torch or broiler.
