  • 2/3 cup pumpkin butter
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 24 tablespoons espresso powder or instant coffee
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1 1/22 teaspoons pumpkin pie spice
  • 1/2 teaspoon kosher salt
  • 1 stick salted butter, at room temperature
  • 1 1/22 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat until browned; cool slightly.
  3. Mix cooled butter with brown sugar, pumpkin butter, egg, vanilla extract, and espresso powder until smooth.
  4. Combine flour, oats, baking soda, pumpkin spice, and salt; stir into wet ingredients until just combined.
  5. Roll the dough into tablespoon-sized balls and place on a lined baking sheet. Flatten slightly.
  6. Bake for about 8 minutes, rotate the tray, then bake for another 2-3 minutes until set at the edges.
  7. Cool on the baking sheet before icing.
