  • 2 large eggs
  • 12 Tbsp unsalted butter, melted
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups shredded zucchini
  • 1 cup chopped pecans
  • 4 Tbsp unsalted butter for frosting
  • 1/2 cup brown sugar for frosting
  • 2 Tbsp milk for frosting
  • Pinch of salt for frosting
  • 1 1/2 cups powdered sugar for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 baking pan and line it with parchment paper.
  2. In a large bowl, whisk together eggs, melted butter, sugars, salt, cinnamon, nutmeg, and vanilla until well combined.
  3. Mix in baking soda then fold in the flour until no dry pockets remain.
  4. Gently fold in shredded zucchini and chopped pecans.
  5. Spread the batter evenly in the prepared pan and bake for 35-45 minutes or until a toothpick inserted comes out clean.
  6. For the frosting, melt butter and brown sugar in a saucepan over medium heat until bubbly. Stir in milk and salt, then whisk in powdered sugar until smooth. Pour over warm zucchini bars.
