  • ¼ cup ground golden flax
  • ¼ cup chopped walnuts
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup unsweetened applesauce
  • â…“ cup honey
  • 4 tablespoons oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini

Instructions

  1. Preheat your oven to 360°F and line two cookie sheets with parchment paper.
  2. In a large bowl, mix quick oats, old fashioned oats, oat flour, ground flax, chopped walnuts, cinnamon, baking powder, and sea salt.
  3. Add unsweetened applesauce, honey, oil, eggs, and vanilla extract to the dry mixture. Stir until well combined.
  4. Scoop about 2 tablespoons of dough for each cookie and place on the prepared sheets about 2 inches apart. Flatten slightly.
